Banana Sweetened Chocolate Muffins

These sugar free chocolate muffins are a perfect healthy breakfast for you and your kiddos. Not only are they gluten free and vegan friendly but they have absolutely no refined sugars in them what-so-ever. The kids love these and actually ask to have them for dessert. Definitely a dessert that is A OK with me. Recipes like this one are my absolute favorite because they are so tummy friendly.


3 mashed bananas
1 cup gluten free oat flour (can simply blend gluten free oats in blender)
1 pureed apple or 1/2 apple sauce
1/2 cup cacao or cocoa powder
1/4 peanut butter
1 flax egg (1 Tablespoon flax with 3 Tablespoons water)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup dark chocolate chips (optional)

Cooking Instructions

  1. Preheat oven to 350
  2. Prepare flax egg in separate container. Let sit.
  3. Puree apple (if using) in blender. Set aside.
  4. In separate bowl, mash bananas.
  5. Add all dry ingredients to mashed banana mixture.
  6. Mix with hand held mixer.
  7. Add flax egg and pureed apple or applesauce and peanut butter.
  8. Mix all ingredients again with hand held blender.
  9. Fill muffin holders 3/4 of the way full
  10. Put into headed oven for 30 minutes.
  11. Allow 30 minutes to cool before removing from wrappers.
