These super yummy, light pancakes are Tom’s recipe! He’s a man who loves finding ways to get all the protein he can! We of course make them gluten free and usually top them with some heated up berries! While I still prefer my three ingredient waffles Tom and the kids devour this yummy gluten free protein pancake recipe. They are totally kid friendly too, no protein powder’s made for adults; just plain protein filled foods. More than anything I love them because they stick with my favorite kitchen tradition: being incredibly quick and easy to make!
1 cup oats (we use Trader Joe’s gluten free oats)
1 cup cottage cheese
1 Tablespoon cinnamon
1 teaspoon vanilla extract
1. Add all ingredients into blender.
**Helpful hint** I highly recommend investing in a high quality blender. We use the NutriBullet and absolutely love it! If you are going to be cooking more in the kitchen, a good blender can be a total game changer!
3. Pour batter onto heated non-stick flat pan, or make sure to drizzle a little olive oil across the pan first.
4. When pancake batter begins to bubble, flip to the other side. Cook for another minute.
5. You’re done! Finish the rest of the batter and you should have about 8 pancakes per batch!
