Being gluten free is no fun. Don’t get me wrong, I am totally thankful people figured out that this is actually a thing, because I struggled most of my life with excessive tiredness, mood swings and stomach bloat and now it all makes sense. There are a few foods that I’ve had to give up that have been the absolute hardest: big pretzels, crescent rolls, donuts, rolls, buns, breadsticks, breaded chicken, breaded anything, ice cream cones (the cone)…Oh wait, where was I? Right, donuts. When I started eating gluten free I was especially particular on making sure I was making healthy, low processed, low sugar foods as well. This is a great idea and there are truly so many awesome tasting foods you can make without compromising your healthy ingredients. In fact, I have a book all about it, and it’s free! But sometimes, there is no substitute for a good ‘ol fashioned pastry. Sometimes, you just gotta splurge. That’s where these fluffy, glazed, gluten free donuts come into play.
