This morning my little man asked for pancakes. It was one of those mornings were food and ingredients were few and far between; but I had total confidence that I could pull of a simple thing like pancakes. A quick browse through the pantry and I had an idea. We had unused sweetened shredded coconut flakes and I just knew there had to be a way to make some seriously yummy, sweet coconut pancakes. Plus, I was just dying for a reason to use our peaches…basically the only fruit left in the house. These gluten free coconut pancakes are super easy, minimal mess, cook super fast and are absolutely tasty!
(Make between 8 and 10 small pancakes)
1 cup GF oats
1 cup sweetened coconut flakes (you can ALWAYS do unsweetened)
1/3 cup coconut milk
1/2 teaspoon baking soda
This is where it gets really easy!
Of course, toppings are up to you, but I personally could have shoveled the whole stack of cakes in my mouth. I shared with my kids, I promise. Share or no share, these gluten free coconut pancakes are a quick fix for any breakfast.
