Growing up I was never a big fan of oatmeal and as an adult, when I started to feel like I had to like it because it was “good for me,” I really struggled to find anything that didn’t feel bland. Usually I would cave in and dump a bunch of brown sugar on top just so I could at least enjoy the entire oatmeal consumption process. Ya feel me? Anyway, I recently through together this super, fast, minimal 2 minute oatmeal breakfast and wanted to share it for those of you who are looking for a quick, easy, and healthy morning breakfast! Foods you need

  • Instant oats
  • Water
  • Ground flax seed

Step 1: 1/4 cup instant oats

This step is pretty self explanatory (like the rest of the steps). Simply add 1/4 of a cup of your instant oats into your bowl.

Step 2: Add 1/2 cup water

Ok, so technically you could have more than 3 tools if you absolutely insisted on having a 1/2 a cup measuring cup. However, I think you should be like me and simply use the 1/4 measuring cup twice and save yourself the extra dish in the sink!

Step 3: Add 1 teaspoon of ground flax seed

Because flax seeds have fiber, omega 3 fatty acids, iron and protein, I wanted to add just a little to my morning breakfast. Trust me, the first time I tried I was worried that the taste of the flax would over-power my oatmeal, but trust me, I’ve got this all figured out. Promise.

Step 4: Add 1 teaspoon of chia seeds

Chia seeds are another good source of fatty acids and can help aid in digestion which is why I like sneaking them into my diet wherever possible. When I first tried this recipe, I kept it simple by just applying a teaspoon of both flax and chia to the recipe and wouldn’t ya know it worked out nicely!

Step 5: Add 1 teaspoon vanilla

Step 6: Stir

In the name of staying minimal, I simply use my now well-loved teaspoon to stir around the ingredients. You don’ have to be too thorough here. A simple swirl will be enough!

Step 7: Microwave covered for 1 minute

Once you’re done stirring, you can add your bowl to the microwave and cover. We have this $2 microwave cover from Target that hasn’t steered us wrong.

This 60 second break is enough to time gather your ingredients, put them back in the cupboard and maybe even give the counter a quick wipedown!

I have been topping my oatmeal with berries since it is officially summer here in Minnesota and I try to stick to eating foods when they are in season. Of course, your final toppings are up to you. Step 9: Drizzle of maple syrup (maybe 2 teaspoons)

I can’t stress enough how little of a drizzle I put of maple syrup and how much in impacts the flavor instantly. I realize this is a thing that a lot of healthier recipe creators do, I just think somehow this entire combo makes it taste so much better — without needing to add any brown sugar!

Bonus Recipe:

If you are up for switching up your recipe, instead of the maple syrup drizzle, you can opt for a mix of

  • 2 teaspoons peanut butter
  • 1 teaspoon nutella

I put mine in a small wine glass. This is going into the microwave so be sure to use a microwave safe dish!

Microwave 30 seconds

Pop this mixture in the microwave for 30 seconds. Once it is all melted together, give it a little stir and drizzle on top of your oatmeal.

  1. Great recipe! I’m also glad you decided to include recipes in your blog. I read your Sunday email and forget about focusing on one thing! I do have some oatmeal in my pantry that I am trying to finish before we move to Austin, TX. I will make this, but will probably do on a stove and for a few minutes, as they are not quick oats.
