Once I discovered Minimalist Baker‘s super easy dairy free 2 Ingredient Yogurt, I just knew I had to get my homemade granola recipe going too! I mean, what’s yogurt without a little fruit and granola? My kids chow the stuff down with chia seed pudding and ask for it as a snack all on its own. But I hoard it and avoid sharing at all costs. I’m super weird about my food. If I wanted yogurt and peeked into my pantry to find that the homemade granola was gone, you’d be staring at the business end of a hissy fit.
Speaking of the kids, they love helping make this granola too; not just eat it. This is a one bowl recipe, one pan and minimal baking time. The best part is you can customize and tweak it where you need to.
3 cups oats
1/2 cup coconut oil
1/2 cup honey
1/4 cup almond slivers
1/4 cup unsweetened shredded coconut
1/4 cup chia seeds
3 Tablespoons cinnamon
3 Tablespoons ground flax seeds
You can use this granola on yogurt, on top of fruit, pancakes, anything. It has a great crunch to it and you will absolutely love it. It’s perfect because it’s also refined sugar free granola. In place of honey you can do agave or maple syrup. I also stick with my Trader Joe’s gluten free oats so that it is totally gluten free granola!
