These delicious chocolaty treats are perfect for those with a gluten intolerance or trying to watch their sugar intake. You could also dress them up a bit by using Andie’s Mints instead of chocolate chips. My husband personally likes topping them with peanut butter since he’s a Reese’s addict.
I made these gluten free favorites last weekend when I was visiting my mom. To my dismay, I left them all their when I made the 6 hour trip home. No surprise, it’s been 2 days and my mom is asking for the recipe. She says my step dad refuses to believe that there are actually black beans in them. I don’t blame him. These are so delicious, it’s hard to believe. Well, here is the proof.
1 can black beans (15oz)
1/2 cup dark chocolate chips
3 Tablespoons coconut oil
3 eggs (or 3 flax eggs to make vegan version)
2/3 cup pure, organic maple syrup (or sugar)
1/2 cup cacao powder (or cocoa powder)
1 teaspoon vanilla extract
1/2 teaspoon baking powder
And that’s it! Seriously so easy! Most things I make involve me tossing the ingredients into my NutriBullet and popping it in the oven. Low maintenance, high taste and quality all the way!
