I am absolutely obsessed with scones! When I started working at an elementary school in the mornings, I would always buy breakfast when they were dishing out scones. The cinnamon sugar ones were always my favorite. After experiencing the magic that is scones, I decided to figure out how to make my own. The day I made the perfect scone was probably one of the best days of my life. You’d think I’m exaggerating, but you would be underestimating just how much a good pastry means to me. Of course, as luck would have it, a few years down the road I realized I had a gluten intolerance. After this I basically gave up on making any of my favorite pastries…for years. It all just seemed way too difficult. However, I have since decided life is too precious to not indulge on these breaded favorites. Therefore, I took on the challenge of creating a perfect gluten free scone; and here it is.

Like most of my gluten free recipes, I used Bob’s Red Mill’s gluten free flour blend. The best part about this was that I actually made money when purchasing this flour! In fact, I made money on everything I bought that day. You can read all about it here: How I Made Money at Target. I’m also so thankful, after downsizing, for my time in my schedule to really be able to slow down and do some baking as well as teach my kids how to bake. Maybe this means they will bring me scones when I’m 80? Who knows. I haven’t thought that far ahead yet (wink, wink.)

Gluten Free Cinnamon Scones

Instructions
  1. 1. Preheat oven to 400
  2. 2. Use a fork to mash sugar and cinnamon with butter.
  3. 3. Combine flour, baking powder and salt in separate bowl.
  4. 4. Slowly mix butter mixture in with flour mixture until you have a crumbly dough forming.
  5. 5. Add milk and shortening to mixture. Stir until well combined and dough ball forms. Sprinkle more flour on if needed.
  6. 6. Sprinkle flour onto flat surface, place dough on top and form until round. Use hands to spread and flatten
  7. 7. Cut dough into 8 equal pieces and place on parchment paper lined baking sheet.
  8. 8. Whip egg in small container. Use brush to coat the tops of the scones. Sprinkle additional cinnamon and sugar on top.
  9. 9. Cook for 10-12 minutes
  10. 10. Allow 5 minutes to cool. Serve warm.

    Iโ€™ve never thought about making gluten free scones. I have a hard time baking scones because I canโ€™t get the density right. Nothing worse than a dense scone
