I am absolutely obsessed with scones! When I started working at an elementary school in the mornings, I would always buy breakfast when they were dishing out scones. The cinnamon sugar ones were always my favorite. After experiencing the magic that is scones, I decided to figure out how to make my own. The day I made the perfect scone was probably one of the best days of my life. You’d think I’m exaggerating, but you would be underestimating just how much a good pastry means to me. Of course, as luck would have it, a few years down the road I realized I had a gluten intolerance. After this I basically gave up on making any of my favorite pastries…for years. It all just seemed way too difficult. However, I have since decided life is too precious to not indulge on these breaded favorites. Therefore, I took on the challenge of creating a perfect gluten free scone; and here it is.
Like most of my gluten free recipes, I used Bob’s Red Mill’s gluten free flour blend. The best part about this was that I actually made money when purchasing this flour! I’m also so thankful, after downsizing, for my time in my schedule to really be able to slow down and do some baking as well as teach my kids how to bake. Maybe this means they will bring me scones when I’m 80? Who knows. I haven’t thought that far ahead yet (wink, wink.)
