Being gluten free is no fun. Don’t get me wrong, I am totally thankful people figured out that this is actually a thing, because I struggled most of my life with excessive tiredness, mood swings and stomach bloat and now it all makes sense. If you think you might be struggling with an intolerance, check out my post all about it: Gluten Intolerance Symptoms. There are a few foods that I’ve had to give up that have been the absolute hardest: big pretzels, crescent rolls, donuts, rolls, buns, breadsticks, breaded chicken, breaded anything, ice cream cones (the cone)…Oh wait, where was I? Right, donuts. When I started eating gluten free I was especially particular on making sure I was making healthy, low processed, low sugar foods as well. This is a great idea and there are truly so many awesome tasting foods you can make without compromising your healthy ingredients. In fact, I have a book all about it, and it’s free! But sometimes, there is no substitute for a good ‘ol fashioned pastry. Sometimes, you just gotta splurge. That’s where these fluffy, glazed, gluten free donuts come into play.
